- 1 lb Beef Flank or Ribeye, thinly sliced
- 2 tbsp avocado or olive oil, divided
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1 tbsp salt, adjust to taste
- 1 tsp ground black pepper, adjust to taste
- 8 slices provolone cheese
- 16 egg roll wrappers
- Oil for frying
Instructions
- Prepare the Beef: Slice the beef into very thin strips and set aside for cooking.
- Sauté Vegetables: Dice the onion and green bell pepper. Heat 1 tablespoon of oil in a pan over medium-low heat. Add the diced vegetables and sauté just until softened. Remove from pan and set aside.
- Cook the Beef: Add the remaining oil to the same pan and increase heat to medium-high. Cook the beef strips until golden brown. Return the sautéed vegetables to the pan, season with salt and pepper, mix well, then remove the pan from heat.
- Assemble Egg Rolls: Lay egg roll wrappers on a clean surface. On the center of each, place about one-third of a slice of provolone cheese, followed by a small amount of the beef and vegetable mixture.
- Roll the Egg Rolls: Fold and roll the wrappers tightly around the filling according to package instructions, sealing the edges properly to prevent filling from escaping during frying.
- Fry the Egg Rolls: Preheat oil in a deep pan to 350°F (175°C). Fry a few egg rolls at a time until they are golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels to remove excess oil.
