  • 4 Bolillo bread rolls

Instructions

  1. Heat the Cochinita Pibil: Warm the prepared cochinita pibil in a skillet or saucepan over medium-high heat until heated through, about 5-7 minutes, stirring occasionally to prevent sticking.
  2. Toast the Bolillo Bread: Spread butter evenly over the outside of each bolillo bread roll. Toast them lightly on a skillet over medium heat until golden and crispy, giving the tortas a satisfying crunch.
  3. Optional Mayo Spread: If using mayonnaise, spread a thin layer on the inside of the top and/or bottom bolillo bun to add richness and moisture.
  4. Assemble the Tortas: Place one bolillo half on a plate and pile on a generous amount (about 1 cup or more) of warm cochinita pibil shredded pork.
