- 260 ml Whole milk (warmed to approx. 40°C)
- 60 g Unsalted butter (softened or melted)
- 1/2 Cube fresh yeast (or 7g/1 packet active dry yeast)
- 3 tbsp Granulated sugar
- 1 tsp Baking powder (approx. 1/2 packet)
- A pinch of salt
- 8 g Vanilla extract (approx. 1 tbsp)
- 150 g Chocolate chips
Glazing
- 4 tbsp Milk (reserved for glazing)
Instructions
- Yeast Preparation: In a large bowl, whisk together the warm milk, yeast, sugar, butter, and vanilla extract. Let the mixture sit for 10 minutes until it becomes foamy, indicating that the yeast is active.
- Mix & Knead: Stir in the baking powder and a pinch of salt into the yeast mixture. Gradually add the all-purpose flour and knead the dough until it is smooth and elastic, about 10 minutes. Then gently fold in the chocolate chips evenly throughout the dough.
- First Rise: Place the dough in a greased bowl, cover it tightly with plastic wrap or a damp cloth, and let it rise in a warm spot for 1 hour, or until it has doubled in size.
- Shape the Buns: Transfer the risen dough onto a lightly floured surface. Divide it into 10 equal portions and roll each into a smooth ball. Arrange the buns on a baking tray lined with parchment paper, ensuring they have space to expand.
- Second Proof: Cover the buns with a towel and let them rise again for 20 minutes, allowing them to puff up slightly.
- First Glaze & Bake: Preheat the oven to 190°C (374°F). Brush the tops of the buns gently with some of the reserved milk to aid browning and create a soft crust. Bake for 20–25 minutes until the buns are golden brown on top.
- Final Glaze: Immediately after removing the buns from the oven, brush them once more with the remaining milk to enhance the softness and shine of the crust.
- Cool and Serve: Allow the buns to cool slightly on a wire rack before serving. These buns are best enjoyed warm and fresh.
