Description

Enjoy the fluffiest chocolate chip milk buns with this easy-to-follow recipe. Soft, pillowy buns studded with sweet chocolate chips, perfect for breakfast or an afternoon treat. The secret is the milk glaze that creates a delicate, cotton-soft crust with every bite.

Ingredients

Scale

Dough Ingredients

  • 450 g All-purpose flour
  • 260 ml Whole milk (warmed to approx. 40°C)
  • 60 g Unsalted butter (softened or melted)
  • 1/2 Cube fresh yeast (or 7g/1 packet active dry yeast)
  • 3 tbsp Granulated sugar
  • 1 tsp Baking powder (approx. 1/2 packet)
  • A pinch of salt
  • 8 g Vanilla extract (approx. 1 tbsp)
  • 150 g Chocolate chips

Glazing

  • 4 tbsp Milk (reserved for glazing)

Instructions

  1. Yeast Preparation: In a large bowl, whisk together the warm milk, yeast, sugar, butter, and vanilla extract. Let the mixture sit for 10 minutes until it becomes foamy, indicating that the yeast is active.
  2. Mix & Knead: Stir in the baking powder and a pinch of salt into the yeast mixture. Gradually add the all-purpose flour and knead the dough until it is smooth and elastic, about 10 minutes. Then gently fold in the chocolate chips evenly throughout the dough.
  3. First Rise: Place the dough in a greased bowl, cover it tightly with plastic wrap or a damp cloth, and let it rise in a warm spot for 1 hour, or until it has doubled in size.
  4. Shape the Buns: Transfer the risen dough onto a lightly floured surface. Divide it into 10 equal portions and roll each into a smooth ball. Arrange the buns on a baking tray lined with parchment paper, ensuring they have space to expand.
  5. Second Proof: Cover the buns with a towel and let them rise again for 20 minutes, allowing them to puff up slightly.
  6. First Glaze & Bake: Preheat the oven to 190°C (374°F). Brush the tops of the buns gently with some of the reserved milk to aid browning and create a soft crust. Bake for 20–25 minutes until the buns are golden brown on top.
  7. Final Glaze: Immediately after removing the buns from the oven, brush them once more with the remaining milk to enhance the softness and shine of the crust.
  8. Cool and Serve: Allow the buns to cool slightly on a wire rack before serving. These buns are best enjoyed warm and fresh.

Notes

  • Brushing milk on hot buns creates that signature soft and cottony crust.
  • Ensure all cold ingredients like milk and butter are warmed to room temperature for optimal yeast activity and dough rise.
  • Chocolate chips can be substituted with raisins or dried cranberries for a fruity twist.
