- 2 tbsp Olive Oil for searing (30ml)
Sauce
- 10.5 oz Cream of Chicken Soup, 1 can (298g)
- 1 cup Sour Cream (240ml)
- 1 packet Ranch Seasoning Mix (28g)
Toppings
- 2 cups Sharp Cheddar Cheese, freshly shredded (200g)
- 8 slices Bacon, cooked crispy and crumbled (225g)
- 1/2 cup Green Onions, sliced (50g)
Instructions
- Prep the Bacon: Fry bacon in a skillet over medium heat until it turns dark red-brown and crispy. Remove from skillet, crumble into small pieces, and set aside.
- Sear the Chicken: Season the cubed chicken with salt and pepper. Heat olive oil in the same skillet over medium-high heat and sear the chicken pieces until they are golden brown on the outside. Once seared, transfer the chicken to a white ceramic baking dish.
- Make the Sauce: In a bowl, whisk together the cream of chicken soup, sour cream, and ranch seasoning mix until the mixture is thick and pale yellow in color.
- Assemble the Casserole: Pour the prepared sauce evenly over the seared chicken in the baking dish. Sprinkle the sharp cheddar cheese evenly on top.
- Bake: Preheat the oven to 375°F (190°C). Place the baking dish in the oven and bake for 20 to 25 minutes or until the cheese is melted, bubbly, and slightly golden.
- Add Toppings and Serve: Remove the dish from the oven. Sprinkle the crispy crumbled bacon and fresh sliced green onions evenly on top before serving.
