- ¾ cup vegetable broth
- 1 cup coconut milk
- ½ cup vegan cheese, shredded (optional)
- ½ cup reserved pasta water
- 1 handful fresh basil
Instructions
- Cook Pasta: Cook the whole wheat linguine according to the package directions, ensuring to reserve at least 1/2 cup of pasta water before draining the pasta.
- Sauté Onion: In a pan, heat 1 to 2 tablespoons of olive oil or a splash of water over medium heat. Add the diced red onion and cook for about 2 minutes until it becomes translucent.
- Add Garlic, Spices, and Tomato Paste: Stir in the minced garlic, Italian seasoning, red chili flakes, salt, black pepper, and tomato paste. Cook and stir until fragrant, approximately 2 minutes.
- Cook Tomatoes: Add the cherry tomatoes and vegetable broth to the pan. Cover the pan and cook for 3 minutes until the tomatoes burst and soften.
- Create Creamy Sauce: Pour in the coconut milk and add the shredded vegan cheese, if using. Stir continuously until the sauce becomes creamy and well combined.
- Combine Pasta and Basil: Add the cooked linguine and fresh basil to the sauce. Toss well so the pasta is fully coated. If the sauce seems too thick, add the reserved pasta water gradually until the desired consistency is reached.
- Serve: Serve immediately while hot for the best flavor and texture.
