  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 4-ounce can green chiles
  • 1 10-ounce can diced tomatoes, undrained
  • 1 ½ cups low sodium beef stock
  • 1 ¼ cups long grain rice
  • 1 ½ tablespoons Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • Parsley for garnish

Instructions

  1. Brown the Beef: Heat a 12-inch skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and cooked through. Drain any excess fat to keep the dish from becoming greasy.
  2. Sauté Aromatics: Add the diced onion, minced garlic, salt, and black pepper to the skillet. Cook for about 2 minutes until the onions begin to soften and become translucent.
  3. Add Remaining Ingredients: Stir in the green chiles, undrained diced tomatoes, low sodium beef stock, long grain rice, and Worcestershire sauce. Mix well and bring the mixture to a simmer over medium heat.
  4. Simmer the Rice: Reduce the heat to low and cover the skillet with a lid. Allow the mixture to cook gently for 20 minutes or until the rice is tender and has absorbed most of the liquid.
  5. Melt the Cheese: Turn off the heat and remove the lid. Sprinkle the shredded cheddar cheese evenly over the top. Cover again and let it sit for about 5 minutes to allow the cheese to melt perfectly.
  6. Garnish and Serve: Remove the lid, garnish with freshly chopped parsley, and serve hot for a satisfying meal.

Notes

  • Drain any extra fat from the ground beef after browning to prevent the dish from becoming greasy.
  • Jasmine rice is recommended, but any long-grain rice will work in this recipe.
  • If the rice is not tender after 20 minutes, cover the skillet again and continue cooking until fully done.
