Crust

Instructions
- Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until evenly mixed. Press the mixture firmly into the bottoms of a muffin tin lined with paper liners to form the crust base.
- Make the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Add granulated sugar and vanilla extract and mix well. Beat in eggs one at a time, then fold in sour cream or Greek yogurt until the mixture is creamy and uniform.
- Fill the crusts: Spoon the cheesecake filling over the crusts in the muffin tin, filling each about 3/4 full. This allows room for rise while baking.
- Bake the cheesecakes: Preheat the oven to 325°F (163°C). Bake the mini cheesecakes for 18-22 minutes, or until the edges are set and the centers slightly jiggle. Remove from oven and allow them to cool completely, then refrigerate for at least 2 hours to set firmly.
- Decorate the cheesecakes: Just before serving, wash and hull the fresh strawberries, then place one on top of each cheesecake to represent the gnome’s hat. Pipe a dollop of whipped cream below the strawberry to form the beard. Place a mini white chocolate chip or candy pearl at the junction as the gnome’s nose.
