Ingredients
Scale
Potatoes
- 5 medium russet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Chicken
- 1.5 lbs chicken breasts, cut into 1/2-inch bite-sized pieces
- 3 tablespoons unsalted butter
- 3/4 teaspoon salt
- 3/4 teaspoon black pepper
- 1.5 teaspoons paprika
- 1.5 teaspoons onion powder
- 1.5 teaspoons Italian seasoning
- 3 tablespoons fresh garlic, minced
- 1/4 teaspoon red pepper flakes
Sauce and Toppings
- 1 1/4 cups garlic parmesan sauce
- 1 1/2 cups fresh mozzarella, shredded
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare and Air Fry Potatoes: Peel and cube the russet potatoes. Toss them with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated. Place the potatoes in a single layer in the air fryer basket and cook at 400°F for 25 minutes, shaking the basket halfway through to ensure even cooking. The potatoes should be golden and fork-tender once done.
- Cook the Chicken: While the potatoes are cooking, cut the chicken breasts into 1/2-inch bite-sized pieces. Heat unsalted butter in a large skillet over medium-high heat until foaming. Add the chicken and cook for 4-5 minutes, stirring occasionally, until mostly cooked through and lightly browned on the edges. Season with salt, black pepper, paprika, onion powder, and Italian seasoning, stirring well to coat evenly.
- Add Garlic and Sauce: Add the freshly minced garlic and red pepper flakes to the chicken in the skillet. Cook for 30 seconds while stirring constantly to release aroma without burning the garlic. Pour in the garlic parmesan sauce, stirring to coat all chicken pieces evenly.
- Combine Potatoes and Chicken: Transfer the cooked potatoes to the skillet with the sauced chicken, stirring gently to combine and heat through. Move the mixture to an oven-safe skillet or 9×13 inch baking dish. Evenly sprinkle the freshly shredded mozzarella cheese over the top.
- Broil the Dish: Place the skillet 4-6 inches from the broiler heat source and broil for 2-3 minutes. Watch carefully and remove when the mozzarella is melted and lightly golden. Sprinkle freshly chopped parsley over the top and serve immediately to enjoy the warm, flavorful dish at its best.
Notes
- Using freshly shredded mozzarella instead of pre-shredded cheese results in smoother melting and better texture.
- Shaking the air fryer basket halfway through cooking ensures the potatoes cook evenly and develop a crispy exterior.
- Broil the dish carefully and stay attentive as the cheese can brown quickly under high heat.
- For best flavor, use freshly minced garlic and fresh parsley.
