Description

This Garlic Butter Steak Bites and Potatoes recipe combines tender, flavorful steak cubes with crispy, herb-infused potatoes, all cooked in a rich garlic butter sauce. Perfect for a quick and satisfying meal, this stovetop dish offers a delightful balance of savory flavors complemented by fresh herbs and a golden sear.

Ingredients

Scale

Steak and Butter

  • 4 tbsp unsalted butter, divided (½ stick)
  • lbs sirloin steak, cut into 1-inch cubes (alternatively beef tenderloin, NY strip steak, or stir fry meat)

Potatoes and Seasoning

  • 1 lb Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground black pepper

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Heat Skillet and Melt Butter: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of unsalted butter. Let the butter melt completely to coat the pan evenly for cooking.
  2. Cook Potatoes with Herbs and Garlic: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground black pepper to the skillet. Cook the potatoes undisturbed for about 4 minutes to develop a crispy crust. Then stir and continue cooking for an additional 3 to 4 minutes until the potatoes are fork-tender. Remove the cooked potatoes from the pan and set them aside in a bowl.
  3. Sear Steak Bites: Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir until melted. Add the steak cubes in a single layer and cook for 1 minute without moving them to get a good sear. Flip or stir the steak bites and cook for another 1 to 2 minutes until reaching your preferred doneness. Remove the skillet from heat once cooked.
  4. Combine Potatoes and Steak: Add the cooked potatoes back into the skillet with the steak bites. Toss together gently to combine all the flavors. Taste and add extra salt or pepper if desired.
  5. Garnish and Serve: Sprinkle freshly chopped parsley over the top if using. Serve immediately and enjoy this delicious garlic butter steak and potato dish.

Notes

  • If potatoes are not tender after 8 minutes but are browning too much, lower the heat to medium-low, add 2 tablespoons of warm water, cover, and cook for another 3 to 4 minutes until the water evaporates and potatoes are cooked through.
  • Do not crowd the pan when cooking potatoes or steak to ensure even cooking and proper searing instead of steaming.
  • Use a meat thermometer to check steak doneness: Rare 125-130°F, Medium-Rare 130-140°F, Medium 140-150°F, Medium-Well 150-160°F, Well-Done 160-165°F.
