Ingredients
Scale
Steak and Butter
- 4 tbsp unsalted butter, divided (½ stick)
- 1½ lbs sirloin steak, cut into 1-inch cubes (alternatively beef tenderloin, NY strip steak, or stir fry meat)
Potatoes and Seasoning
- 1 lb Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground black pepper
Garnish
- Freshly chopped parsley (optional)
Instructions
- Heat Skillet and Melt Butter: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of unsalted butter. Let the butter melt completely to coat the pan evenly for cooking.
- Cook Potatoes with Herbs and Garlic: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground black pepper to the skillet. Cook the potatoes undisturbed for about 4 minutes to develop a crispy crust. Then stir and continue cooking for an additional 3 to 4 minutes until the potatoes are fork-tender. Remove the cooked potatoes from the pan and set them aside in a bowl.
- Sear Steak Bites: Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir until melted. Add the steak cubes in a single layer and cook for 1 minute without moving them to get a good sear. Flip or stir the steak bites and cook for another 1 to 2 minutes until reaching your preferred doneness. Remove the skillet from heat once cooked.
- Combine Potatoes and Steak: Add the cooked potatoes back into the skillet with the steak bites. Toss together gently to combine all the flavors. Taste and add extra salt or pepper if desired.
- Garnish and Serve: Sprinkle freshly chopped parsley over the top if using. Serve immediately and enjoy this delicious garlic butter steak and potato dish.
Notes
- If potatoes are not tender after 8 minutes but are browning too much, lower the heat to medium-low, add 2 tablespoons of warm water, cover, and cook for another 3 to 4 minutes until the water evaporates and potatoes are cooked through.
- Do not crowd the pan when cooking potatoes or steak to ensure even cooking and proper searing instead of steaming.
- Use a meat thermometer to check steak doneness: Rare 125-130°F, Medium-Rare 130-140°F, Medium 140-150°F, Medium-Well 150-160°F, Well-Done 160-165°F.
