These Easy French Dip Sliders are a delicious and comforting appetizer or meal featuring tender roast beef, melted provolone cheese, caramelized onions, and sweet rolls baked to perfection. Served with savory au jus for dipping, these sliders are perfect for parties or casual gatherings.

For the Caramelized Onions

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Sliders

  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

For the Topping

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix

For the Au Jus

  • 1 packet au jus gravy mix
  • 3 cups water
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt 3 tablespoons of unsalted butter. Add the thinly sliced onion and coat it in the butter. Cook, stirring occasionally, for 12 to 15 minutes until the onions are soft and browned but not burnt.
  2. Season the Onions: Add the minced thyme, kosher salt, and black pepper to the onions. Stir to combine well, then remove the skillet from heat and set aside.
  3. Prepare the Baking Dish and Rolls: Preheat your oven to 350°F (175°C). Remove the sweet rolls from their package, keeping them intact. Using a large knife, carefully slice the rolls horizontally to separate tops and bottoms. Place the bottom halves, cut side up, into an 11×7 inch baking dish.
  4. Assemble the Sliders: Layer half of the provolone cheese slices over the bottoms of the rolls. Next, add the sliced roast beef evenly on top. Spread the caramelized onions over the roast beef, then add the remaining cheese slices on top. Finally, place the top halves of the rolls over the layered ingredients.
  5. Prepare the Butter Topping: In a small bowl, combine the melted unsalted butter with the dried onion soup mix. Use a brush to evenly coat the tops of the rolls with this mixture, or pour it gently over them for full coverage.
  6. Bake the Sliders: Cover the baking dish loosely with foil, ensuring the foil does not touch the tops of the rolls. Bake in the oven for 25 minutes. Remove the foil and bake for an additional 5 minutes to brown and slightly crisp the tops of the rolls.
  7. Prepare the Au Jus and Serve: While the sliders bake, prepare the au jus according to the package instructions using 3 cups of water. Serve the sliders warm with fresh chopped parsley as a garnish if desired, and provide the au jus on the side for dipping.

Notes

  • Dried herbs can be used instead of fresh thyme; just halve the amount.
  • Any slider buns can be used, but sweet rolls add a nice touch of sweetness.
  • Provolone and mozzarella are recommended cheese choices, but feel free to use your favorite melting cheese.
  • The au jus is optional but adds extra flavor and moisture when serving the sliders.
