Description

This creamy low carb chicken casserole combines tender broccoli, savory turkey bacon, and shredded chicken in a rich blend of cheeses and ranch dressing. Baked until bubbly and golden, it’s a comforting, protein-packed meal perfect for a healthy dinner or meal prep.

Ingredients

Scale

Vegetables

  • 5 cups broccoli florets
  • 3 cloves garlic, minced

Meat

  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced

Dairy & Dressings

  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Cook the broccoli: Steam or blanch the broccoli florets until just tender, which usually takes about 3-5 minutes. Drain thoroughly to avoid excess moisture in the casserole.
  3. Mix ingredients: In a large bowl, combine the cooked chicken, broccoli, chopped turkey bacon, minced garlic, shredded mozzarella, shredded cheddar, and ranch dressing. Stir well until everything is evenly coated.
  4. Spread mixture: Transfer the mixed ingredients evenly into the prepared baking dish, spreading it out to create a uniform layer.
  5. Add cheese topping: Sprinkle the additional shredded cheddar and mozzarella evenly over the top of the casserole to create a cheesy crust when baked.
  6. Bake the casserole: Place the dish in the preheated oven and bake for 25 to 30 minutes, or until the casserole is hot and bubbly and the cheese on top is melted and slightly golden.
  7. Rest and serve: Remove from the oven and let the casserole rest for 5 to 10 minutes before serving. This helps it set and makes it easier to portion.

Notes

  • For extra creaminess, stir in a splash of heavy cream or sour cream into the mixture before baking.
  • Using rotisserie chicken can save a lot of prep time and effort.
  • Cauliflower or roasted zucchini are excellent low carb alternatives to broccoli.
  • This casserole freezes well; wrap tightly in foil or plastic wrap and thaw before reheating.
