Caesar Dressing

  • 1/3 cup extra virgin olive oil
  • 1/3 cup mayo

  • 12 cloves garlic, grated
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Caesar Pizza

  • 23 cups chopped romaine lettuce
  • 1 cup seasoned croutons
  • 1/2 pound ball of pizza dough
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, sliced or chopped
  • Chili flakes to taste
  • 1/2 cup cooked chicken, sliced or shredded
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup shredded provolone cheese
  • 1 small Meyer lemon or regular lemon, thinly sliced
  • 1/2 cup fresh basil leaves

Instructions

  1. Make the Dressing: In a glass jar or bowl, combine the extra virgin olive oil, mayo, lemon juice, Dijon mustard, Worcestershire sauce, grated garlic, and grated Parmesan. Season with salt and pepper to taste. Shake or whisk well to emulsify.
  2. Toss the Salad: Place the chopped romaine lettuce, seasoned croutons, and Parmesan cheese in a large bowl. Pour the dressing over the salad and toss gently until everything is coated evenly.
  3. Prepare the Dough: Preheat your oven to 450°F (232°C). On a lightly floured surface, roll out the pizza dough into a thin, approximately 10-12 inch circle. Transfer the dough to a baking sheet or pizza stone.
  4. Assemble the Pizza: Lightly brush the rolled-out dough with the tablespoon of olive oil. Evenly sprinkle the sliced or chopped garlic and chili flakes over the surface. Add half of the sliced or shredded chicken, then evenly distribute the shredded mozzarella and provolone cheeses on top. Arrange the thin lemon slices over the cheese.
