Ingredients

Scale

Salad Ingredients

  • 1 ½ pounds cherry tomatoes (680 grams)
  • 7 ounces fresh mozzarella (200 grams)
  • ½ cup fresh basil leaves (about 2025 leaves)

Seasoning and Dressing

  • ¼ cup extra virgin olive oil
  • 1 ½ teaspoons sea salt, divided
  • ½ teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Prepare Tomatoes: Cut the cherry tomatoes in halves or quarters, varying the sizes for a rustic look. Place them in a bowl, sprinkle with 1 teaspoon of sea salt, and let them sit for 10 minutes to draw out their natural flavors. After resting, add one tablespoon of olive oil and gently toss.
  2. Prepare Mozzarella: Tear the fresh mozzarella into chunks roughly the same size as the tomato pieces for balanced bites.
  3. Arrange Base: Spread the seasoned tomatoes, including their juices, in a wide serving bowl or platter.
  4. Add Mozzarella: Scatter the torn mozzarella chunks evenly over the tomatoes.
  5. Add Basil: Tear the fresh basil leaves and scatter them over the mozzarella and tomatoes.
  6. Season the Salad: Sprinkle dried oregano, freshly ground black pepper, and the remaining ½ teaspoon of salt over the salad evenly.
  7. Dress the Salad: Drizzle the remaining olive oil over the entire salad.
  8. Final Toss and Garnish: Gently toss the salad to combine all flavors without breaking the cheese or tomatoes. Finish by scattering a few whole basil leaves on top before serving.

Notes

  • Cherry Tomatoes: You can substitute grape tomatoes if cherry tomatoes are unavailable.
  • Mozzarella: Use fresh mozzarella balls packed in whey or water. Avoid low-moisture or dry-packed mozzarella. Bocconcini or pearl mozzarella work well as substitutes.
  • Use room temperature tomatoes and mozzarella for the best flavors and texture.
  • Choose a high-quality extra virgin olive oil to enhance the dressing.
  • Make sure your dried oregano is fresh and aromatic to add a flavorful punch.
  • Always taste and adjust seasoning according to your preference.
