Chicken and Seasoning

  • 3 Boneless Skinless Chicken Breasts

  • 2 teaspoons Onion Powder
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Cajun Seasoning (plus more to taste)
  • 1 teaspoon Paprika

Vegetables and Roux

  • ½ Yellow Onion, sliced
  • 2 Bell Peppers, sliced
  • 1 Celery Stalk, diced
  • 4 tablespoons Butter
  • 1 teaspoon Olive Oil (for skillet)
  • ¼ cup All-Purpose Flour

Gravy Base

  • 2 cups Chicken Broth
  • 1 teaspoon Chicken Bouillon Powder

Instructions

  1. Season the Chicken: Drizzle 1 teaspoon of olive oil over the chicken breasts and rub it in thoroughly on both sides. Season both sides evenly with onion powder, garlic powder, Cajun seasoning, and paprika to infuse the chicken with bold Cajun flavors.
  2. Sear the Chicken: Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the chicken breasts and sear each side for 3–4 minutes until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and reduce heat to low to prepare for the gravy.
  3. Sauté Vegetables and Make Roux: Add butter to the same skillet, then toss in the sliced peppers, onions, and diced celery. Sauté the vegetables until soft and slightly browned on the edges to develop depth of flavor. Sprinkle the flour over the veggies and stir continuously to form a roux, cooking for 2–3 minutes to remove the raw flour taste.
  4. Make the Gravy: Gradually whisk in the chicken broth, chicken bouillon powder, and additional Cajun seasoning until smooth and lump-free. Bring the mixture to a simmer, allowing it to thicken and combine all flavors.
  5. Combine Chicken and Simmer: Shred the cooked chicken breasts and add them into the gravy. Simmer gently until the gravy reaches your desired thickness and the chicken is heated through.

Notes
