Description

Delightful Blueberry Pastry Rings filled with luscious blueberry preserves and topped with a smooth, creamy vanilla cream. These elegant puff pastry treats are perfect for breakfast, brunch, or a sweet snack, offering a beautiful combination of flaky pastry, sweet fruit filling, and creamy topping.

Ingredients

Scale

For the Pastry:

  • 1 sheet puff pastry, thawed
  • ½ cup blueberry preserves or pie filling
  • 1 egg (for egg wash)

For the Vanilla Cream:

  • ½ cup cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or cream (to adjust consistency)

For Topping (optional):

  • Powdered sugar for dusting
  • Fresh blueberries

Instructions

  1. Prepare the Vanilla Cream: In a bowl, beat together the cream cheese, powdered sugar, vanilla extract, and milk until the mixture is smooth and pipeable. Chill the cream in the refrigerator until ready to use to maintain its shape when piping.
  2. Prepare the Pastry Rings: Preheat your oven to 375°F (190°C). On a lightly floured surface, unroll the puff pastry sheet and cut it into 8 even strips. Shape each strip into a ring by looping the ends together and pinching to seal. Place the rings evenly spaced on a baking sheet lined with parchment paper.
  3. Add Filling: Spoon a small amount of blueberry preserves into the center of each pastry ring. Use a brush to apply the beaten egg wash to the edges of the pastry rings to give them a golden, shiny finish when baked.
  4. Bake: Bake the pastry rings in the preheated oven for 18 to 20 minutes until they puff up and turn a beautiful golden brown. Remove from the oven and transfer to a wire rack to cool slightly.
  5. Add Vanilla Cream: Once the pastry rings have cooled enough to handle but are still slightly warm, pipe or spoon the chilled vanilla cream over or into the center of each ring. Optionally, place fresh blueberries on top of the cream for added freshness and visual appeal.
  6. Serve: Just before serving, dust the pastry rings lightly with powdered sugar to enhance their presentation and add a touch of sweetness. Enjoy these elegant treats fresh for the best texture and flavor.

Notes

  • Ensure the puff pastry is fully thawed but kept chilled to avoid sticking and tearing during handling.
  • The vanilla cream can be prepared a day ahead and refrigerated; bring to room temperature before piping for easier handling.
  • Use fresh or frozen blueberry preserves depending on availability and preference.
  • For a dairy-free version, substitute cream cheese with a vegan alternative and use plant-based milk.
  • Store leftovers in an airtight container in the refrigerator and consume within 2 days for optimal freshness.
