For Shrimp:
- 1 pound shrimp (large or jumbo, cleaned and deveined)
- ¾ cup buttermilk
- ¼ cup all-purpose flour
- ¼ cup cornstarch
- 1 egg

- ½ tablespoon hot sauce
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup Panko breadcrumbs

For Sauce:
- ¼ cup mayonnaise
- 2 tablespoons sweet chili sauce (e.g., Frank’s)
- ½ tablespoon hot sauce (e.g., Frank’s hot sauce)
- 1 tablespoon honey
- Salt and pepper (to taste)
Instructions
- Prepare the sauce. Mix all ingredients for the sauce together — mayonnaise, sweet chili sauce, hot sauce, honey, salt, and pepper — in a bowl. Refrigerate until ready to serve to allow the flavors to meld.
- Make the batter. In a medium bowl, combine flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper. Add hot sauce, egg, and buttermilk, whisking until you get a smooth batter.
- Coat the shrimp in the batter. Add the cleaned shrimp to the batter and toss well to ensure each piece is fully coated. Set aside to allow the coating to adhere.
- Prepare the breadcrumbs. Place the Panko breadcrumbs in another bowl for dredging.
- Bread the shrimp. Take each battered shrimp and coat it thoroughly in the Panko breadcrumbs. Use more breadcrumbs as needed to achieve an even coating.
- Fry the shrimp. Heat oil in a skillet over medium-high heat until hot. Fry the shrimp for about 2 minutes on each side or until they turn a light golden brown. Work in batches to avoid overcrowding, which can lower the oil temperature and cause sogginess.
- Drain excess oil. Transfer cooked shrimp to a paper towel-lined plate to absorb excess oil.
- Serve. Drizzle the crispy shrimp with the prepared sauce and serve immediately for best texture and flavor.
