Almond Cream Filling

- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons pure almond extract

- 1 and 1/2 cups almond flour
- Zest of 1 lemon or orange
Instructions
- Prepare the almond cream filling: In a bowl, whisk together the melted unsalted butter and granulated sugar until smooth. Add the two large eggs, almond extract, vanilla extract, almond flour, and the zest of one lemon or orange. Mix well to form a smooth, creamy filling.
- Prepare the puff pastry sheets: Lay out the thawed puff pastry sheets on a clean surface. Using a rolling pin, gently roll each sheet to smooth and slightly thin them if necessary, making them easier to handle and shape.
- Assemble the swirls: Spread an even layer of the almond cream filling over each puff pastry sheet. Starting from one edge, carefully roll each sheet into a tight log. Slice each rolled log evenly to create swirls.
- Arrange and garnish: Place the swirls on a baking sheet lined with parchment paper or a silicone baking mat. Brush the tops with heavy cream and sprinkle almond slices over each piece. Add cherries or fresh berries on top or on the side for garnish.
