Description

This Vanilla Berry Mousse Ring Cake with Velvet Effect is an elegant, no-bake dessert that combines a light vanilla mousse with a refreshing mixed berry jelly center. Molded into a ring shape and finished with a stunning velvet spray, this cake is perfect for special occasions or when you want to impress.

  • 2 cups heavy whipping cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 2 1/2 tsp powdered gelatin
  • 3 tbsp cold water (for blooming gelatin)
  • For the Berry Jelly Insert:
  • 1 1/2 cups mixed berries (strawberries, raspberries, blueberries)
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 2 tsp powdered gelatin
  • 2 tbsp water (for blooming gelatin)
  • For the Velvet Spray:
  • 100g white chocolate
  • 50g cocoa butter
  • Food coloring (optional, red or pink)

Instructions

  1. Prepare the Berry Jelly Insert: Bloom the gelatin in water. In a saucepan, heat the berries, sugar, and lemon juice until soft. Blend and strain the mixture to remove seeds. Stir in the bloomed gelatin until fully dissolved. Pour into a smaller silicone mold (insert size) and freeze until solid.
  2. Make the Vanilla Mousse: Bloom the gelatin in cold water. Heat the milk and sugar until warm (not boiling), then stir in bloomed gelatin and vanilla extract. Cool to room temperature. Whip the heavy cream to soft peaks and fold it into the cooled milk mixture gently.
  3. Assemble the Cake: Fill a ring-shaped silicone mold halfway with vanilla mousse. Press the frozen berry insert into the center and cover with more mousse. Smooth the surface and freeze the entire cake overnight until solid.
  4. Make the Velvet Spray: Melt the white chocolate and cocoa butter together. Add food coloring if desired. Using a spray gun or airbrush, spray the frozen cake evenly to create a velvet texture.
  5. Transfer to the fridge for 2–3 hours before serving to allow the mousse to soften slightly for the perfect texture.

Notes

  • Use silicone molds for easy removal and best results with the velvet effect.
  • You can substitute the berry insert with mango, passion fruit, or other fruit purees.
  • The velvet spray should only be applied to frozen surfaces for the texture to appear properly.
