- 1 lb baby potatoes, halved
- 2 tablespoons butter
- 1 tablespoon honey or maple syrup

Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a small bowl, mix olive oil, minced garlic, salt, pepper, rosemary, and thyme.
- Place chicken thighs and baby potatoes on the baking sheet. Brush the chicken and potatoes with the garlic herb mixture, tossing potatoes to coat evenly.
- Roast in the oven for 35-40 minutes, turning potatoes halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
- In the last 5 minutes of roasting, melt butter and mix with honey or maple syrup. Drizzle over the baby potatoes for a glossy glaze.
- Remove from oven, garnish with fresh parsley, and serve hot.
