  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 lb baby potatoes, halved
  • 2 tablespoons butter
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, mix olive oil, minced garlic, salt, pepper, rosemary, and thyme.
  3. Place chicken thighs and baby potatoes on the baking sheet. Brush the chicken and potatoes with the garlic herb mixture, tossing potatoes to coat evenly.
  4. Roast in the oven for 35-40 minutes, turning potatoes halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
  5. In the last 5 minutes of roasting, melt butter and mix with honey or maple syrup. Drizzle over the baby potatoes for a glossy glaze.
  6. Remove from oven, garnish with fresh parsley, and serve hot.
