- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup chopped walnuts or pecans
- 1/4 cup peanut butter
- 1/4 cup honey or maple syrup
- 1 1/2 cups milk (dairy or non-dairy)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp baking powder
- 1 egg
- Optional: banana slices and extra nuts for topping
Instructions
- Preheat oven to 180°C (350°F). Grease an 8×8-inch baking dish.
- In a large bowl, mash the bananas. Add the peanut butter, honey, milk, vanilla, and egg. Mix until smooth.
- Stir in the oats, cinnamon, salt, and baking powder. Fold in the chopped nuts.
- Pour mixture into the prepared dish and spread evenly. Top with banana slices and extra nuts if desired.
- Bake for 30–35 minutes, or until the top is golden and the center is set.
- Let cool slightly before serving. Can be served warm or at room temperature.
Notes
- Use almond butter or sunflower seed butter for a peanut-free version.
- This dish reheats well and can be stored in the fridge for up to 4 days.
- Drizzle with a little maple syrup or a dollop of Greek yogurt for serving.
