Instructions

  1. Prepare the beef mixture: In a large skillet over medium heat, cook the lean ground beef until browned, breaking it up as it cooks. Add the diced yellow onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
  2. Add seasoning and veggies: Stir in the taco seasoning packet along with the frozen corn, canned diced tomatoes with green chilies (including the juice), and black beans if using. Allow the mixture to simmer for 5-7 minutes until heated through and flavors meld.
  3. Combine with sour cream: Remove the skillet from heat and stir in 1 cup of sour cream to add creaminess and balance the spices.
  4. Layer the casserole: In an ungreased casserole dish, spread half of the finely crushed Doritos as the bottom layer. Next, evenly spread the beef mixture over the chips. Sprinkle 1 ½ cups of the Mexican blend cheese over the meat layer. Top with the remaining finely crushed Doritos and the rest of the cheese.
