Wonton Cups

  • 24 wonton wrappers

Filling

  • ½ pound lean ground beef
  • 3 tablespoons water
  • 1½ tablespoons mild taco seasoning

Toppings

  • 1 cup shredded fiesta blend cheese
  • 1 cup shredded lettuce
  • ½ cup guacamole
  • ½ cup sour cream
  • ½ cup pico de gallo

Instructions

  1. Preheat oven and prepare muffin tin: Preheat your oven to 375°F. Lightly spray a standard muffin tin with non-stick cooking spray to prevent sticking.
  2. Form wonton cups: Press one wonton wrapper into each muffin tin cup, then press a second wrapper on top, ensuring both are firmly pressed into the walls and bottom of the cups. Repeat for all cups.
  3. Bake wonton shells: Bake the wonton cups for 8-10 minutes until golden brown, noting that the tips may darken more than the bottoms.
  4. Cook ground beef: While baking, heat a small saucepan or nonstick skillet over medium-high heat. Add the ground beef and stir continuously, breaking it into small pieces until fully cooked and no longer pink.
  5. Season beef: Lower heat to low and stir in the taco seasoning and water. Simmer for a few minutes to blend the flavors, then remove from heat.
  6. Assemble taco bites: Spoon about 1 tablespoon of the seasoned taco meat into each baked wonton cup.
  7. Add cheese: Sprinkle 1 tablespoon of shredded fiesta blend cheese over the meat in each cup.
  8. Add lettuce: Top the cheese with ½ to 1 tablespoon of shredded lettuce.
  9. Add guacamole: Spoon 1 to 1½ teaspoons of guacamole on top of the lettuce.
  10. Add sour cream: Place a small dollop (~1 teaspoon) of sour cream in the center over the guacamole.
  11. Add pico de gallo and serve: Finally, spoon 1 to 2 teaspoons of pico de gallo onto the sour cream. Serve immediately for the best texture.

  • To store leftovers, place any uneaten taco bites in an airtight container and refrigerate for up to 2 days.
