  • 2 cups whole milk ricotta cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1 tbsp all-purpose flour
  • 1/2 tsp ground cinnamon
  • Zest of 1 lemon
  • Zest of 1 orange

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat the ricotta until smooth.
  3. Add the sugar, eggs, vanilla, almond extract (if using), flour, cinnamon, lemon zest, and orange zest. Mix until well combined and creamy.
  4. Pour the mixture into the unbaked pie crust and smooth the top with a spatula.
  5. Bake for 45–55 minutes, or until the center is set and the top is lightly golden.
  6. Remove from oven and let cool completely. Chill in the refrigerator for a few hours or overnight before serving.
