  • 1 cup fresh strawberries, hulled and chopped
  • 2 tablespoons sugar (for strawberry sauce)
  • 1 teaspoon lemon juice

Instructions

  1. In a medium saucepan, combine chopped strawberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat until strawberries break down and sauce thickens, about 10 minutes. Mash slightly with a fork and set aside to cool.
  2. In a mixing bowl, whisk together flour, baking powder, salt, and granulated sugar.
  3. In another bowl, whisk together milk, egg, and vanilla extract. Pour into the dry ingredients and mix until smooth.
  4. Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
  5. Transfer batter to a piping bag or zip-top bag with the corner snipped.
  6. Pipe 3–4 inch strips of batter into the hot oil, frying in batches. Cook until golden brown, about 1–2 minutes per side.
  7. Remove fries with a slotted spoon and drain on paper towels.
  8. Dust generously with powdered sugar and serve with the strawberry sauce for dipping.
