- 1/2 cup strawberry jam or preserves
- Fresh strawberries for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, mix sugar, oil, eggs, vanilla, buttermilk, red food coloring, and vinegar until combined.
- Gradually add dry ingredients to the wet mixture and mix until smooth.
- In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until creamy for the cheesecake filling.
- Fill each cupcake liner halfway with red velvet batter. Add a spoonful of cheesecake filling in the center, then top with more batter until 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the cupcake part comes out clean.
- Cool completely, then top each cupcake with strawberry jam and garnish with fresh strawberries.
Notes
- Ensure cream cheese is softened for a smooth filling.
- For a richer strawberry flavor, use homemade strawberry compote.
