Description

  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract (for cheesecake filling)
  • 1/2 cup strawberry jam or preserves
  • Fresh strawberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mix sugar, oil, eggs, vanilla, buttermilk, red food coloring, and vinegar until combined.
  4. Gradually add dry ingredients to the wet mixture and mix until smooth.
  5. In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until creamy for the cheesecake filling.
  6. Fill each cupcake liner halfway with red velvet batter. Add a spoonful of cheesecake filling in the center, then top with more batter until 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the cupcake part comes out clean.
  8. Cool completely, then top each cupcake with strawberry jam and garnish with fresh strawberries.
