Ingredients
Scale
Steak Tips Marinade and Cooking
- 1–2 pounds sirloin steak, cut into 1-inch cubes
- 3 tablespoons Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 3 garlic cloves, finely minced
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 cup unsalted butter, divided (plus more as needed)
- 1 cup sliced baby bella mushrooms, rinsed and patted dry
Roasted Potatoes and Asparagus
- 2 tablespoons extra virgin olive oil
- 2 cups halved baby potatoes
- 1/2 pound asparagus, ends trimmed
Instructions
- Marinate the Steak: In a bowl, combine Worcestershire sauce, balsamic vinegar, minced garlic, kosher salt, black pepper, dried oregano, onion powder, and smoked paprika. Add the sirloin steak cubes and toss to coat evenly. Let the steak marinate for at least 30 minutes to absorb the flavors.
- Prepare Vegetables: Preheat the oven to 400°F (200°C). Toss the halved baby potatoes in 1 tablespoon of olive oil, season with salt and pepper, then spread them on a baking sheet. Roast in the oven for about 20 minutes.
- Add Asparagus to Roast: After the potatoes have roasted for 20 minutes, add the trimmed asparagus to the baking sheet, drizzle with the remaining 1 tablespoon olive oil, and season with salt and pepper. Continue roasting for another 10 to 15 minutes until potatoes are golden and tender and asparagus is crisp-tender.
- Sauté Mushrooms: While vegetables are roasting, melt half of the butter (2 tablespoons) in a large skillet over medium-high heat. Add sliced baby bella mushrooms and sauté until they are browned and tender, about 5 minutes. Remove mushrooms from skillet and set aside.
- Cook the Steak Tips: In the same skillet, melt the remaining butter. Add the marinated steak cubes in a single layer, avoiding overcrowding. Cook the steak tips over medium-high heat, turning occasionally until they are nicely seared on all sides and cooked to your preferred doneness, about 6-8 minutes total.
- Combine Mushrooms and Steak: Return the sautéed mushrooms to the skillet with the steak tips. Stir gently to combine and heat through, about 1-2 minutes.
- Serve: Plate the steak tips with mushrooms alongside the roasted potatoes and asparagus. Adjust seasoning with additional salt and pepper if needed. Serve immediately for a warm, satisfying meal.
Notes
- For more tender steak tips, marinate the meat for at least 1 hour or overnight if possible.
- You can substitute baby bella mushrooms with cremini or white button mushrooms.
- Adjust roasting time depending on the size of potatoes to ensure softness.
- Use a meat thermometer if desired: 130°F for medium-rare, 140°F for medium doneness.
- Butter can be substituted with olive oil for a dairy-free option, though it changes the flavor profile.
