Ingredients
Scale
Pork Chops
- 6 boneless pork chops
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
Scalloped Potatoes
- 4 cups thinly sliced potatoes
- 1 small onion, thinly sliced
- 2 cups shredded cheddar cheese, divided
Sauce
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 cup chicken broth
- 1 tsp dried thyme
- 1/2 tsp paprika
- 2 tbsp butter
Garnish
- Fresh parsley, chopped (optional)
Instructions
- Season the Pork Chops: In a small bowl, combine salt, black pepper, garlic powder, and onion powder. Rub this seasoning mix evenly over both sides of the pork chops to infuse them with flavor.
- Sear the Pork Chops: Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear them for about 2-3 minutes on each side until golden brown. Remove from heat and set aside.
- Prepare the Cheese Sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until bubbly and slightly golden to make a roux. Gradually whisk in milk and chicken broth, stirring constantly to prevent lumps. Continue to cook and stir until the sauce thickens. Stir in dried thyme, paprika, and 1 1/2 cups of shredded cheddar cheese until melted and smooth.
- Assemble the Casserole: Preheat oven to 375°F (190°C). In a greased casserole dish, layer half of the sliced potatoes evenly, followed by half of the sliced onions. Pour half of the cheese sauce over the potatoes and onions. Repeat with the remaining potatoes, onions, and cheese sauce. Sprinkle the remaining 1/2 cup cheddar cheese on top.
- Add the Pork Chops: Place the seared pork chops on top of the prepared scalloped potato layers in the casserole dish.
- Bake: Cover the casserole dish with foil and bake in the preheated oven for 40-50 minutes until the potatoes are tender and the pork chops are cooked through. Remove foil during the last 10 minutes to allow the cheese topping to brown slightly.
- Garnish and Serve: Remove from oven and let cool for a few minutes. Garnish with chopped fresh parsley if desired. Serve warm and enjoy your hearty smothered pork chop scalloped potato casserole.
Notes
- For best results, slice potatoes thinly and uniformly to ensure even cooking.
- You can substitute cheddar cheese with Colby or Monterey Jack for a milder flavor.
- If you prefer, use bone-in pork chops but adjust cooking time accordingly to ensure they are fully cooked.
- Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven or microwave.
- For a thicker sauce, reduce chicken broth to 1/4 cup and substitute the rest with milk.
