- 12 oz elbow macaroni or pasta of choice
- 1 tablespoon olive oil
- 14 oz smoked sausage, sliced into rounds
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper, to taste
- Optional: chopped parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced smoked sausage and cook until browned. Remove from skillet and set aside.
- In the same skillet, melt butter. Stir in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk and heavy cream. Cook over medium heat, stirring constantly, until the mixture thickens (about 3–5 minutes).
- Stir in cheddar and mozzarella cheese until melted and smooth. Season with salt and pepper.
- Add cooked pasta and sausage to the sauce, stirring until well coated and heated through.
- Garnish with parsley if desired and serve hot.

- Use spicy smoked sausage for extra kick.
- Can be baked with a breadcrumb topping for a crispy finish.
