Instructions

  1. Prep and Brown the Beef: Heat the olive oil in a skillet over medium-high heat. Add the beef cubes in batches and brown all sides until nicely seared. This step locks in the juices and adds depth of flavor to the stew.
  2. Transfer to Slow Cooker: Place the browned beef into the slow cooker. Add the chopped onion, minced garlic, sliced carrots, and quartered mushrooms on top of the beef.
  3. Add Liquids and Seasonings: Pour in the red wine and beef broth. Stir in the tomato paste, dried thyme, and add the bay leaf. Season with salt and pepper to taste.
