Description

This Rustic Caramel Drip Cake with Whipped Vanilla Cream & Fresh Berries is a showstopping dessert that brings together the rich flavor of caramel, the lightness of whipped cream, and the freshness of seasonal berries. Perfect for celebrations or special gatherings, it’s both elegant and comforting with a beautiful rustic touch.

Ingredients

Scale
  • 2 8-inch round vanilla sponge cake layers (homemade or store-bought)
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/2 cup thick caramel sauce (plus more for drizzling)
  • 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
  • Optional: mint leaves for garnish

Instructions

  1. If using homemade cake, bake and fully cool the vanilla sponge layers.
  2. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. Place one cake layer on a serving plate. Spread a generous layer of whipped vanilla cream on top.
  4. Add a handful of fresh berries over the cream and gently place the second cake layer on top.
  5. Frost the top and sides with the remaining whipped cream, leaving it semi-naked for a rustic look.
  6. Warm the caramel sauce slightly if needed, then drizzle over the top edges to create a drip effect.
  7. Decorate the top with more fresh berries and mint leaves if desired.
  8. Chill for 30 minutes before serving to set.

Notes

  • Use stabilized whipped cream if the cake will sit out for long periods.
  • You can make the caramel sauce from scratch or use store-bought.
  • For added texture, layer in some crushed nuts or sponge crumbs between the layers.
