Description

Juicy chicken breasts stuffed with roasted red peppers, fresh spinach, and creamy mozzarella cheese, then oven-baked to perfection for a healthy and flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers (jarred or homemade), sliced
  • 1 cup fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Toothpicks or kitchen twine (for securing the chicken)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice a pocket into the side of each chicken breast without cutting all the way through.
  3. Season the inside and outside of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  4. Stuff each chicken breast with roasted red peppers, spinach leaves, and mozzarella cheese.
  5. Secure the openings with toothpicks or kitchen twine.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes on each side until golden.
  7. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  8. Remove toothpicks or twine before serving. Let rest for a few minutes before slicing.

Notes

  • You can substitute mozzarella with provolone or feta for a different flavor profile.
  • For extra flavor, marinate the chicken beforehand in olive oil, lemon juice, and herbs.
  • Serve with a side of quinoa, rice, or roasted vegetables.
