- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers (jarred or homemade), sliced
- 1 cup fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Toothpicks or kitchen twine (for securing the chicken)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice a pocket into the side of each chicken breast without cutting all the way through.
- Season the inside and outside of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Stuff each chicken breast with roasted red peppers, spinach leaves, and mozzarella cheese.
- Secure the openings with toothpicks or kitchen twine.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes on each side until golden.
- Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
- Remove toothpicks or twine before serving. Let rest for a few minutes before slicing.
Notes
- You can substitute mozzarella with provolone or feta for a different flavor profile.
- For extra flavor, marinate the chicken beforehand in olive oil, lemon juice, and herbs.
- Serve with a side of quinoa, rice, or roasted vegetables.
