Ingredients
Scale
- 1 baguette, sliced into 1/2-inch pieces
- 2 tablespoons olive oil
- 2 cups seedless red grapes
- 1 tablespoon fresh thyme leaves (plus more for garnish)
- 1 tablespoon honey
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 8 oz burrata cheese
- 2 tablespoons balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss grapes with olive oil, honey, thyme, salt, and pepper. Spread on the baking sheet.
- Roast grapes for 20–25 minutes, or until they begin to burst and caramelize. Set aside to cool slightly.
- While grapes roast, brush baguette slices with olive oil and toast in the oven for 8–10 minutes until golden and crisp.
- Once toasted, top each crostini with a generous spoon of burrata.
- Add a few roasted grapes on top of the cheese, then drizzle with balsamic glaze.
- Garnish with additional thyme leaves and serve immediately.
Notes
- You can prepare the roasted grapes ahead and store them in the fridge, then reheat slightly before serving.
- Try using rosemary or basil for a different herbal twist.
- Great with a glass of white wine or Prosecco.
