Raspberry Jam Oat Bars are a delightful treat combining a buttery oat crust and crumbly topping with a sweet and tangy raspberry jam filling. These bars make a perfect snack or dessert with a wholesome texture and vibrant fruit flavor.

- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 3/4 cup brown sugar, packed
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup raspberry jam
- 1 tsp vanilla extract
Instructions
- Preheat oven to 175°C (350°F). Grease or line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, baking soda, and salt.
- Add melted butter and vanilla extract, stirring until mixture is crumbly but holds together when pressed.
- Press about two-thirds of the oat mixture evenly into the bottom of the prepared pan.
- Spread raspberry jam evenly over the crust layer.
- Crumble the remaining oat mixture over the jam layer.
- Bake for 30–35 minutes or until the top is golden brown.
- Allow to cool completely before cutting into bars to set properly.
Notes
- Use your favorite flavor of jam or preserve as a substitute for raspberry.
- For added texture, mix in 1/4 cup chopped nuts or shredded coconut.
- Store bars in an airtight container at room temperature for up to 5 days.
