Description

Golden, crispy on the outside and soft on the inside, these sweet and spiced pumpkin fritters are a comforting treat often enjoyed warm with a dusting of cinnamon sugar. Perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups grated pumpkin
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/4 cup milk (or as needed)
  • Vegetable oil for frying
  • Cinnamon sugar, for sprinkling

Instructions

  1. In a large bowl, mix together the grated pumpkin, flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. Add the beaten egg and enough milk to create a thick batter that can be dropped from a spoon.
  3. Heat vegetable oil in a deep skillet over medium heat.
  4. Drop spoonfuls of the batter into the hot oil, frying a few at a time without overcrowding the pan.
  5. Cook until golden brown on both sides, turning as needed (about 2–3 minutes per side).
  6. Remove fritters and drain on paper towels.
  7. Sprinkle with cinnamon sugar while still warm and serve immediately.

Notes

  • For extra flavor, add a splash of vanilla extract to the batter.
  • You can substitute butternut squash for pumpkin if desired.
  • Best served fresh but can be reheated in the oven for a few minutes.
