- 2 cups grated pumpkin
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 egg, beaten
- 1/4 cup milk (or as needed)
- Vegetable oil for frying
- Cinnamon sugar, for sprinkling
Instructions
- In a large bowl, mix together the grated pumpkin, flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- Add the beaten egg and enough milk to create a thick batter that can be dropped from a spoon.
- Heat vegetable oil in a deep skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, frying a few at a time without overcrowding the pan.
- Cook until golden brown on both sides, turning as needed (about 2–3 minutes per side).
- Remove fritters and drain on paper towels.
- Sprinkle with cinnamon sugar while still warm and serve immediately.
Notes
- For extra flavor, add a splash of vanilla extract to the batter.
- You can substitute butternut squash for pumpkin if desired.
- Best served fresh but can be reheated in the oven for a few minutes.
