- 1 lb boneless, skinless chicken breast, sliced thinly
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon vegetable oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- Salt and pepper, to taste
- Green onions, sliced, for garnish
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add sliced chicken and cook until browned and cooked through, about 5-6 minutes. Remove and set aside.
- In the same skillet, add garlic and onions, sauté for 1-2 minutes until fragrant.
- Add bell peppers and pineapple chunks, cook for another 3-4 minutes until vegetables are tender-crisp.
- Return the chicken to the skillet. Stir in soy sauce, oyster sauce, and the cornstarch slurry.
- Cook for another 2 minutes, stirring frequently until the sauce thickens and coats everything evenly.
- Season with salt and pepper to taste. Garnish with sliced green onions before serving.
Notes
- Use fresh pineapple for a brighter flavor, canned works fine too.
- Serve over steamed rice or noodles for a complete meal.
- Add crushed red pepper flakes for extra heat.
