Description

This One-Pan Honey BBQ Chicken & Sweet Potatoes recipe is a delicious and easy-to-make meal perfect for weeknights. Juicy chicken breasts are seasoned and roasted alongside sweet, tender sweet potatoes, all coated in a flavorful honey BBQ sauce. The dish is garnished with fresh parsley for a touch of brightness, making it a wholesome, comforting dinner with minimal cleanup.

Ingredients

Scale

Chicken and Sweet Potatoes

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

Honey BBQ Sauce

  • 1/2 cup honey BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon crushed red pepper flakes (optional)

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Chicken and Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the cubed sweet potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated. Place the sweet potatoes evenly on a large baking sheet.
  2. Season the Chicken: Rub the chicken breasts with the remaining tablespoon of olive oil and season them with salt and black pepper on both sides. Arrange the chicken breasts on the baking sheet next to the sweet potatoes.
  3. Make the Honey BBQ Sauce: In a small bowl, whisk together the honey BBQ sauce, honey, apple cider vinegar, and crushed red pepper flakes until well combined.
  4. Coat Chicken with Sauce: Brush half of the prepared honey BBQ sauce over the chicken breasts generously.
  5. Bake the Dish: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the sweet potatoes are tender. Halfway through baking, brush the chicken with the remaining honey BBQ sauce to ensure maximum flavor.
  6. Garnish and Serve: Remove from oven, let the chicken rest for 5 minutes, then sprinkle chopped fresh parsley over the chicken and sweet potatoes before serving.

Notes

  • You can substitute chicken thighs for breasts if you prefer a juicier texture.
  • If you like a spicier kick, increase the amount of crushed red pepper flakes.
  • Make sure to cut the sweet potatoes into uniform cubes to ensure even cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a gluten-free option, verify that your honey BBQ sauce is gluten-free.
