Instructions

  1. Crush the Cookies: Place gingersnap cookies in a food processor or seal them in a plastic bag and crush finely using a rolling pin until you achieve a fine crumb consistency.
  2. Mix with Cream Cheese: In a mixing bowl, combine the crushed gingersnap cookies with the softened cream cheese. Stir well until the mixture is fully blended and forms a dough-like consistency.
  3. Form Balls: Using your hands or a small scoop, roll the mixture into small, bite-sized balls and place them on a baking sheet lined with parchment paper.
  4. Chill: Refrigerate the formed balls for at least 1 hour to firm up and make coating easier.
  5. Melt White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 20-30 second intervals, stirring in between until smooth and fully melted.
