Instructions

- Mix wet ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup or honey, lime zest, lime juice, vanilla extract, and almond milk. Ensure all ingredients are thoroughly combined to infuse the mixture with zest and sweetness.
- Combine wet and dry components: Slowly pour the wet ingredient mixture into the bowl with the dry ingredients. Stir vigorously until the mixture forms a consistent, sticky dough that holds together well. The chia seeds will begin to absorb moisture creating the pudding-like texture.
- Press into pan: Line a square baking dish or pan with parchment paper. Transfer the mixture into the pan and press firmly into an even layer to create the pudding bars. Use the back of a spatula or your hands to smooth the surface.
- Chill and set: Place the pan in the refrigerator for at least 2-3 hours, or until the bars are fully set and firm enough to cut. This chilling step helps the chia seeds thicken and bind the bars together.
- Cut and garnish: Once set, remove the bars from the pan using the parchment paper edges. Cut into squares or rectangles as desired. Garnish with extra shredded coconut and lime zest for added texture and visual appeal, if desired.
