Beef Filling
- 1 tbsp olive oil
- 500g (1lb 2oz) lean beef mince (5% fat)
- 2 tbsp fajita seasoning
- 1 red pepper, seeds removed and thinly sliced
- ½ red onion, finely chopped
Fresh Toppings
- 1 tomato, finely chopped
- 1 avocado, peeled, stone removed and finely chopped
- small handful fresh coriander, finely chopped
- ½ Little Gem lettuce, shredded
- 1–2 limes, juice only
Additional Ingredients
- 2 tbsp soured cream
- 4 large flour tortilla wraps
- 35g (1¼oz) cheddar, grated
- 2 handfuls tortilla chips
- pinch salt
- hot sauce, to serve
Instructions
- Heat the oil: Warm the olive oil in a large frying pan over medium heat until shimmering.
- Cook the beef: Add the lean beef mince to the pan, breaking it up with a spoon. Cook for about 5 minutes until browned and cooked through.
- Season the beef: Stir in the fajita seasoning, mixing well to evenly coat the beef. Cook for another 2 minutes to allow the flavors to develop.
- Add the vegetables: Add the sliced red pepper and finely chopped red onion to the pan. Sauté together with the beef for 3-4 minutes until the vegetables soften but still have some bite.
- Prepare the fresh toppings: While the beef mixture cooks, combine the chopped tomato, avocado, and fresh coriander in a bowl. Squeeze over the juice of 1 lime and mix gently to combine.
- Warm the tortillas: Heat the flour tortilla wraps in a dry pan or microwave until soft and pliable.
- Assemble the burritos: Lay each tortilla flat and spread a spoonful of soured cream down the center. Add the beef and vegetable mixture, followed by shredded lettuce, fresh topping mixture, grated cheddar, and a handful of tortilla chips for crunch. Season with a pinch of salt and a squeeze of extra lime juice if desired.
- Wrap and serve: Fold the sides of the tortilla over the filling, then roll from the bottom to form a burrito. Serve immediately with hot sauce on the side for extra heat.
