- 1 lb fresh green beans, trimmed
- 2 tbsp white miso paste
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 2 tbsp water
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp toasted sesame seeds
Instructions
- In a small bowl, whisk together miso paste, soy sauce, rice vinegar, honey, and water until smooth. Set aside.
- Blanch the green beans in boiling salted water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
- Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger and sauté for 30 seconds.
- Add green beans and toss for 1-2 minutes to coat with aromatics.
- Pour in the miso glaze and toss until the beans are evenly coated and heated through.
- Sprinkle with toasted sesame seeds before serving.
Notes
- For extra flavor, toast the sesame seeds in a dry skillet before using.
- You can substitute tamari for soy sauce for a gluten-free option.
