Description

Mint Chocolate Chip Snowball Cookies are buttery, melt-in-your-mouth treats bursting with cool mint flavor and dotted with rich chocolate chips. Perfect for holiday cookie trays or any time you crave a refreshing twist on a classic snowball cookie.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for dusting)
  • 1/2 teaspoon salt
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup mini chocolate chips
  • Green food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the peppermint and vanilla extracts. Add a few drops of green food coloring if desired and mix until evenly colored.
  4. Gradually stir in the flour and salt until just combined.
  5. Fold in the mini chocolate chips.
  6. Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the bottoms are lightly golden but the tops remain pale.
  8. Let cookies cool for 5 minutes, then roll in additional powdered sugar while still warm. Cool completely and roll in powdered sugar again for a snowy finish.

Notes

  • Do not overbake — snowball cookies should not brown on top.
  • You can substitute peppermint extract with mint extract for a different flavor.
  • Chill the dough for 30 minutes if it’s too soft to roll.
  • Store in an airtight container at room temperature for up to 5 days.
