Ingredients
Scale
Main Ingredients
- 1 can lentils (15 oz / 400 g) or 1½ cups (230 g) cooked lentils
- 1 medium to large sweet potato
- ½ cup all-purpose flour
- 1 cup crumbled feta cheese (substitute with ½ cup grated parmesan)
- 1 large egg
- ½ red onion, finely chopped
- 1 clove garlic, grated
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin (substitute with 1 teaspoon paprika)
- ½ teaspoon salt
- Black pepper, to taste
- 1 tablespoon olive oil (plus more as needed for cooking)
Instructions
- Cook the Sweet Potato: Poke the sweet potato several times with a fork and microwave it for 5–7 minutes until very soft and fork tender. Once cooked, cut it open carefully and scoop out the soft flesh into a large mixing bowl.
- Mash with Lentils: Drain and rinse the canned lentils, shaking off excess water thoroughly. Add the lentils to the bowl with the sweet potato and mash together with a fork until the texture is mostly smooth; small lumps are acceptable.
- Mix Everything Together: Add the all-purpose flour, crumbled feta, egg, finely chopped red onion, grated garlic, dried oregano, ground cumin, salt, and black pepper to the mashed mixture. Stir well until combined. The mixture should be thick and easy to scoop; if too wet, add a little more flour gradually.
- Cook the Patties: Heat olive oil in a skillet or frying pan over medium heat. Scoop about 2 tablespoons of the mixture and gently flatten into a patty shape. Cook each patty for 3–4 minutes on each side or until golden brown and cooked through.
- Serve: Serve the lentil sweet potato patties warm alongside tzatziki, yogurt, or with a fresh squeeze of lemon. Enjoy as a nutritious snack or light meal.
Notes
- Substitutions: Feta cheese can be substituted with grated parmesan for a different flavor.
- You can use paprika instead of cumin if preferred.
- For a gluten-free option, replace all-purpose flour with a gluten-free flour blend.
- If the mixture feels too wet, gradually add more flour for binding.
- Cook patties over medium heat to ensure they cook through without burning.
- These patties freeze well—cook and cool completely before freezing. Reheat in a skillet or oven.
