Instructions
- Prepare the mixture: In a large mixing bowl, combine the mashed potatoes, stuffing, and shredded turkey. Mix thoroughly until the ingredients are evenly incorporated.
- Form the balls: Using your hands, shape the mixture into golf ball-sized balls. Make sure they hold together well; if too soft, add a little more stuffing or panko to help bind.
- Coat with panko: Roll each ball lightly in panko breadcrumbs to create a crispy crust when cooked.
- Cook the balls: Preheat a skillet over medium heat with a bit of oil. Place the stuffing balls in the skillet, cooking them in batches if necessary. Fry for about 3-4 minutes on each side until golden brown and heated through.
- Serve: Remove the balls from the skillet and drain on paper towels if desired. Season with black pepper as preferred and serve warm with gravy on the side for dipping.
Notes
- Panko breadcrumbs add a wonderful crunch but can be substituted with regular breadcrumbs if needed.
- If the mixture is too wet to form balls, chill it for 30 minutes or add more stuffing or panko to absorb moisture.
- These can also be baked at 375°F (190°C) for 20-25 minutes, turning halfway through for a healthier option.
- Leftover gravy can be used for dipping; reheat gently before serving.
