Ingredients
Scale
Sausage and Seasoning
- 1 pound Italian sausage
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon steak seasoning
- ½ teaspoon paprika
- ½ teaspoon ground black pepper
Soup Base
- 14 ounces can of tomato sauce
- 14 ounces can of diced tomatoes with Italian herbs
- 2 tablespoons minced garlic
- 4 cups chicken broth
- 1½ cups water
Other Ingredients
- 10 ounces uncooked bowtie pasta
- ½ cup ricotta cheese
- Parmesan cheese, for garnish (optional)
- Fresh parsley, for garnish (optional)
Instructions
- Cook the Sausage: In a large pot or Dutch oven over medium heat, brown the Italian sausage, breaking it apart with a spoon until fully cooked and no pink remains. Drain excess fat if necessary.
- Add Seasonings and Garlic: Stir in the Italian seasoning, onion powder, steak seasoning, paprika, ground black pepper, and minced garlic. Cook for 1-2 minutes until the garlic is fragrant.
- Add Tomatoes and Broth: Pour in the tomato sauce and diced tomatoes with Italian herbs. Then add the chicken broth and water. Stir everything together and bring the mixture to a boil.
- Simmer the Soup: Reduce heat to medium-low and let the soup simmer uncovered for about 10-15 minutes to allow flavors to meld.
- Cook the Pasta: Add the uncooked bowtie pasta directly into the simmering soup. Continue cooking for another 10-12 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.
- Serve: Ladle the soup into bowls. Add a spoonful of ricotta cheese on top of each serving. Garnish with Parmesan cheese and fresh parsley if desired. Serve hot.
Notes
- Use mild or spicy Italian sausage depending on your heat preference.
- If you want a vegetarian version, substitute sausage with plant-based sausage and use vegetable broth instead of chicken broth.
- You can prepare the soup a day ahead; flavors improve overnight. Reheat gently and add extra broth if it thickens too much.
- For gluten-free, substitute the bowtie pasta with gluten-free pasta.
- Adjust seasoning to taste before serving, adding salt or extra Italian seasoning as needed.
