Ingredients
Scale
- 1 lb ground beef
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese (for filling)
- 1/4 cup low-carb marinara sauce (plus extra for dipping)
- 1 1/2 cups shredded mozzarella cheese (for dough)
- 2 oz cream cheese
- 3/4 cup almond flour
- 1/2 tsp baking powder
- 1 large egg
- 1 tbsp grated Parmesan cheese (optional topping)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the ground beef with garlic powder, onion powder, Italian seasoning, salt, and pepper until fully browned. Drain excess fat.
- Stir in 1/4 cup marinara sauce and simmer for 2–3 minutes. Remove from heat and let cool slightly.
- In a microwave-safe bowl, combine 1 1/2 cups mozzarella and cream cheese. Microwave in 30-second intervals until melted and smooth, stirring in between.
- Add almond flour, baking powder, and the egg to the melted cheese mixture. Mix well until a dough forms (use your hands or a spatula).
- Roll the dough out between two sheets of parchment paper into a rectangle (about 1/4 inch thick).
- Spread the beef mixture down the center of the dough, sprinkle with 1 cup shredded mozzarella, and fold the sides over to enclose the filling. Seal edges by pressing gently.
- Slice into sticks or logs, and transfer to the prepared baking sheet seam-side down.
- Sprinkle with grated Parmesan if desired, and bake for 15–18 minutes or until golden brown.
- Cool slightly and serve with extra marinara sauce for dipping.
Notes
- You can substitute almond flour with coconut flour (1/4 cup), but adjust egg content if needed.
- Store leftovers in the fridge and reheat in an air fryer for crispiness.
- For a spicier version, add red pepper flakes to the beef mixture.
