  • 1 lb ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (for filling)
  • 1/4 cup low-carb marinara sauce (plus extra for dipping)
  • 1 1/2 cups shredded mozzarella cheese (for dough)
  • 2 oz cream cheese
  • 3/4 cup almond flour
  • 1/2 tsp baking powder
  • 1 large egg
  • 1 tbsp grated Parmesan cheese (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook the ground beef with garlic powder, onion powder, Italian seasoning, salt, and pepper until fully browned. Drain excess fat.
  3. Stir in 1/4 cup marinara sauce and simmer for 2–3 minutes. Remove from heat and let cool slightly.
  4. In a microwave-safe bowl, combine 1 1/2 cups mozzarella and cream cheese. Microwave in 30-second intervals until melted and smooth, stirring in between.
  5. Add almond flour, baking powder, and the egg to the melted cheese mixture. Mix well until a dough forms (use your hands or a spatula).
  6. Roll the dough out between two sheets of parchment paper into a rectangle (about 1/4 inch thick).
  7. Spread the beef mixture down the center of the dough, sprinkle with 1 cup shredded mozzarella, and fold the sides over to enclose the filling. Seal edges by pressing gently.
  8. Slice into sticks or logs, and transfer to the prepared baking sheet seam-side down.
  9. Sprinkle with grated Parmesan if desired, and bake for 15–18 minutes or until golden brown.
  10. Cool slightly and serve with extra marinara sauce for dipping.

Notes

  • You can substitute almond flour with coconut flour (1/4 cup), but adjust egg content if needed.
  • Store leftovers in the fridge and reheat in an air fryer for crispiness.
  • For a spicier version, add red pepper flakes to the beef mixture.
