Description

Humpty Dumpty Dip is a rich and creamy egg-based dip featuring hard-boiled eggs, sharp cheddar cheese, crispy bacon, and a blend of spices. Perfect for parties or casual snacking, this flavorful dip combines the smoothness of mayonnaise and Dijon mustard with a touch of heat from hot sauce and smoky paprika, served best with crackers, chips, or toasted bread slices.

Ingredients

Scale

Dip Ingredients

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika, plus extra for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, finely chopped

Serving

  • Crackers, chips, or toasted bread slices, for serving

Instructions

  1. Boil the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat and let the eggs sit covered for 10-12 minutes. Then, transfer eggs to an ice bath to cool completely.
  2. Peel and Chop: Peel the cooled eggs and chop them coarsely, setting aside a few for garnish if desired.
  3. Mix the Dip Base: In a large bowl, combine the mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Mix well to create a smooth base.
  4. Combine Ingredients: Add the chopped eggs, shredded sharp cheddar cheese, crumbled bacon, and finely chopped green onions to the mayonnaise mixture. Gently fold everything together until well mixed but still chunky.
  5. Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or hot sauce as desired.
  6. Serve: Transfer the dip to a serving bowl. Garnish with a sprinkle of paprika and reserved chopped eggs or green onions. Serve with crackers, chips, or toasted bread slices.

Notes

  • For a smoother dip, blend the mixture briefly in a food processor.
  • Use turkey bacon for a lower fat option.
  • Keep the dip refrigerated and consume within 2-3 days for freshness.
  • Adjust the hot sauce intensity to your preferred spice level.
  • Adding a squeeze of lemon juice can brighten the flavor if desired.
