Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 tbsp milk
  • 2 cups all-purpose flour (heat-treated for safety)
  • 1/2 tsp salt
  • 1 1/2 cups mini chocolate chips
  • 1 quart vanilla ice cream, softened
  • 1/2 cup hot fudge sauce, plus more for drizzling

Instructions

  1. Line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in vanilla and milk. Then add heat-treated flour and salt, stirring until well combined.
  4. Fold in the mini chocolate chips.
  5. Divide the dough in half. Press one half evenly into the prepared pan and freeze for 10–15 minutes.
  6. Spread the softened vanilla ice cream evenly over the chilled cookie dough layer. Drizzle with hot fudge sauce and gently spread it across.
  7. Flatten the remaining cookie dough on a separate sheet of parchment and lay it over the ice cream layer, pressing gently to adhere.
  8. Freeze for at least 4 hours or until firm. Slice into sandwiches and drizzle with more hot fudge before serving, if desired.

Notes

  • For easier slicing, run a sharp knife under warm water before cutting.
  • You can use chocolate or coffee ice cream instead of vanilla for a twist.
