  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 1 large avocado, diced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing (store-bought or homemade)
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 head romaine lettuce, leaves separated and washed
  • Croutons (optional, for topping)

Instructions

  1. In a bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, salt, and pepper to create the marinade.
  2. Place chicken breasts in the marinade and refrigerate for at least 30 minutes.
  3. Grill or pan-sear the marinated chicken over medium heat for 5–6 minutes per side or until fully cooked. Let rest, then slice thinly.
  4. In a separate bowl, combine diced avocado, Parmesan cheese, and Caesar dressing. Gently mix.
  5. To assemble, lay out romaine lettuce leaves and fill each with a spoonful of the avocado Caesar mix, followed by sliced chicken.
  6. Top with additional Parmesan, chopped cilantro, and croutons if desired. Serve immediately.
