- 1 large avocado, diced
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar dressing (store-bought or homemade)
- 1 tablespoon chopped fresh cilantro (optional)
- 1 head romaine lettuce, leaves separated and washed
- Croutons (optional, for topping)
Instructions
- In a bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, salt, and pepper to create the marinade.
- Place chicken breasts in the marinade and refrigerate for at least 30 minutes.
- Grill or pan-sear the marinated chicken over medium heat for 5–6 minutes per side or until fully cooked. Let rest, then slice thinly.
- In a separate bowl, combine diced avocado, Parmesan cheese, and Caesar dressing. Gently mix.
- To assemble, lay out romaine lettuce leaves and fill each with a spoonful of the avocado Caesar mix, followed by sliced chicken.
- Top with additional Parmesan, chopped cilantro, and croutons if desired. Serve immediately.
