Pork Chops
- 2x 9oz (250g) bone-in pork chops, brought close to room temperature
Sauce and Seasoning
- 2 tbsp unsalted butter
- 4 large cloves garlic (2 lightly crushed with skins on, 2 minced)
- 1/4 cup (80g) honey
- 1.5 tbsp apple cider vinegar
- 1 tbsp light/all-purpose soy sauce
- 1 sprig rosemary
- 1 sprig thyme
- Salt, to taste
- Black pepper, to taste
- Olive oil, as needed
Instructions
- Prepare the Pork Chops: Remove the bone-in pork chops from the refrigerator and allow them to come close to room temperature. This ensures more even cooking.
- Sear the Pork Chops: Heat a skillet over medium-high heat and add a little olive oil. Season the pork chops on both sides with salt and black pepper. Once the oil is hot, sear the pork chops for about 3-4 minutes per side until they develop a golden brown crust. Remove the chops from the pan and set aside.
- Sauté Garlic and Herbs: In the same skillet, add the unsalted butter. Once melted, add the 2 lightly crushed garlic cloves with skins on along with the sprigs of rosemary and thyme. Sauté for 1-2 minutes until fragrant to infuse the butter with flavor.
- Add Honey Garlic Sauce Ingredients: Add the minced garlic cloves to the skillet and cook for another 30 seconds. Then pour in the honey, apple cider vinegar, and soy sauce. Stir the mixture gently to combine and bring it to a low simmer.
- Combine Pork Chops with Sauce: Return the seared pork chops to the skillet, spoon some of the sauce over them, and reduce the heat to low. Let the pork chops cook in the sauce for 3-5 minutes, spooning sauce on top occasionally, until the pork chops are cooked through and the sauce has thickened to a glaze consistency.
