  • 2 tablespoons cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon butter (for sauce)
  • 2 cups cooked white rice
  • 1/2 cup heavy cream or half-and-half (for creamy rice)
  • 2 tablespoons butter (for creamy rice)
  • 1/4 cup grated Parmesan cheese (optional)
  • Chopped green onions or parsley for garnish

Instructions

  1. In a bowl, toss chicken pieces with cornstarch, salt, and pepper until evenly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 6-8 minutes. Remove and set aside.
  3. In the same skillet, add butter, garlic, honey, soy sauce, vinegar, and red pepper flakes. Stir and simmer for 2-3 minutes until slightly thickened.
  4. Return chicken to the pan and toss to coat in the sauce. Cook for another 1-2 minutes until heated through and glazed.
  5. In a separate saucepan, heat butter over medium heat. Add cooked rice, cream, and Parmesan. Stir until creamy and heated through.
  6. Spoon creamy rice onto plates and top with honey garlic chicken bites. Garnish with chopped green onions or parsley.
